It's September!!!! We are one month closer to Halloween guys 😱 the most wonderful time of the year!!! Here is what my September looks like, the days in yellow are days I already have orders for. The 7th, 14, 15 and 17th I will not be taking additional orders. The rest of the month is wide open!!!! I will be posting new fall flavors and Halloween themed donuts SEPTEMBER 23!!! Hello everyone! Just a friendly reminder as we get closer to the end of August that the "Ice Cream Social," box of donuts will not be available once summer is over. You may see 1 or 2 of the flavors bopping about every now and then but as for the whole box it is a Summer specialty. If you need your Más y Más donut fix I will be making specialty boxes throughout the rest of the year as well as creating seasonal specialty boxes. So, DONUT WORRY! Yesterday was our daughter's 12th birthday, so of course she got a special @strangerthingstv cake to celebrate! Here we have a chocolate and vanilla cake with homemade cherry filling in the center. The top drips are dark chocolate with black food coloring and the red lettering is red vine flavored. Mini waffle is of course an @eggo_us with the dark chocolate numbers. The rest of the cake is slathered in dairy free whipped cream. Meet my girls, my ride or die. Both hold a special place in my heart and pantry due to the fact that they are Bone Char Free and non GMO verified. I'm sure you've never read bone char in the list of ingredients on the back of a regular bag of sugar but you may have seen it under "natural carbon." Having spent a few years at @mothersmarkets I was surrounded by so much information that I utilize it every day. I do my best to use the best ingredients possible even if it may mean spending a little more. In the long run I'd rather not sacrifice quality for quantity. The days I will be unavailable for orders are August 10, 16,17and the 24th. I appreciate all of your support and will keep you guys up to date every 1st of the month so you can plan ahead as well. Currently I have the following flavors available: Top left: Toasted Oh's (toasted Pops cereal and golden oreos ), Strawberryquik with sprinkles. Top right: The Vanilli (tastes like a melted vanilla ice cream on top of a donut ). Below it is the strawberry crunch (similar to the good humor ice cream bar ) Middle left: Blk Out Chocolate (dark chocolate glaze ). Oreo Dust (crushed oreos on top of vanilla glaze ) Middle Right: Dulce de not Leche (coconut milk turned into dulce de "leche" ). Horchata glaze with cinnamon dusted on top. Bottom left: Neapolitan Dynamite (chocolate,strawberry and vanilla glaze an ode to the ice cream sandwich ) Last but certainly not least the Banana Split (banana pudding filled donut topped with chocolate glaze, chopped nuts, sprinkles, dairy free whip, banana chip and a cherry on top. The ice cream flavors will only be available until the end of August. Every month I will have new flavors available and if you'd like a custom flavor I'm open to custom orders. Can you believe it guys?! Next Friday is National Doughnut Day!!!! I love doughnuts, I love making doughnuts and I love spreading my love of doughnuts. So, I'm here to share with you that I will be whipping up a few dozen doughnuts Friday morning if anyone is interested in ordering. I'm only one person with one fryer at home so I will only be taking a few orders. The last day to submit an order is June 4th so that I can prepare my necessary ingredients/quantities. It's #worldbakingday !!! So I made a batch of easy as heck chocolate chip cookies this morning to celebrate. I mean any little reason to bake is enough for me to throw together a dozen or two of goodies. It's an easy to follow recipe and it's just as easy to have 3 in the blink of an eye so watch out! The recipe makes 22 cookies that are 126 calories each 6.8g of carbs 10.3g of fat and 2.8g of protein if made with organic maple syrup. Ingredients: 2 Eggs 1/2 cup of butter (room temp/soft ) 2 cups almond flour 1/2 tsp. Baking soda 2/3 cups dark chocolate chips (sugar free if you prefer ) 1 tbsp. Vanilla extract 1/3 cup of your low carb or sugar free sweetener substitute Preheat oven to 350 place parchment paper on two baking sheets and you're ready to get your cookie on! 1. Cream together your butter and sweetener. Then add your eggs one at a time (making sure you scrape the sides down of the bowl after each mix ). Once that is all mixed add your vanilla and mix for one more minute. 2. Look at you you're on to step 2! Add almond flour and baking soda to butter/sweetener mix and mix until fully combined. Then add your chocolatey chippies and fold them in yourself. 3. Use a tablespoon sized scooper to portion out your cookie dough and place your plops of gooey goodness onto your prepared baking sheets. Badabing, badaboom. 4. Bake the cookies for 7 minutes, then pull them out and switch your baking sheets from top to bottom and vice versa so you can get a nice even tan on them. Bake for another 7 minutes in heaven! 5. Pull those suckers out and let them cool on the pans for 5 minutes, after that you can put them onto wire racks to cool completely (and by completely I mean as long as you realistically can wait before eating one ) tops 20 minutes? All that's left is for you to enjoy them or hoard them in an airtight container at room temp for up to 2 days... they can also just CHILL out in your freezer too. #masymas #cookies #wakenadbake
On today's agenda I had the ever finicky macaron. I had a simple vanilla flavored recipe but thought I'd be cute and take out the powdered sugar in the recipe and replace it with sifted strawberry nesquik. I was going for an almond butter and jelly flavor, which I nailed...but due to the extra ingredients in nesquik powder I only had one decent macaron with cute feet and passable tops. Lesson learned, stick to powdered sugar for pretty macarons and not 23 abominations. Since macarons need Italian meringue I also practiced that, which before last month I was struggling with my damn peaks. I would say this morning's macarons were delicious and a little on the not so cute side. Altogether a successful attempt at a recipe and technique I struggle with. I've set myself a baking goal of learning/ executing 94 different baking recipes and techniques over the next 3 months. Why, why not? I believe that I am capable of so much and this is just one those self given goals I will be trying my damndest to achieve. Here we have a 3 tiered chocolate cake (recipe from Deceptive Desserts by Christine McConnell ), with a homemade vanilla whip and a special crunchy crumble I put together. Over the weekend I tried my hand at a lemon meringue pie and boy was that a heck of task. But, I did it! It wasn't the prettiest but it was out of this world delicioso. So stay tuned my friends I will be documenting my baking charades more often. Baked...yet again! Last night Sopheea and I made cookies for her bff’s birthday so I made Valentine’s Day cookies with what was left. These sugar cookies came from a secret recipe my Tia was nice of enough to share with me. I’m pretty sure it’s the best sugar cookie recipe out there. I made vegan ding dong/cakes the other night and let me tell you...they were AMAZING!!! There wasn’t any actual sugar in the recipe instead it called for gluten free flour, cocoa,coconut milk,baking soda, cornstarch, dark chocolate,vanilla, salt,organic dates, organic apple sauce and organic maple syrup. I didn’t have any dates on hand so I just increased the apple sauce. It was a bit of bitch getting the coconut cream filling inside but sooooo worth it. To honor Peanut Butter today I made strawberry and peanut butter glazed donuts! I used the white cake recipe in the @nerdynummies cookbook but threw in strawberries and food coloring to get my “jelly” flavor. The final product was a moist strawberry cake topped with peanut butter. If you’re Hispanic you know that Día de Los Reyes is right around the corner and at your local bakery or grocery store you can buy yourself one of these. I forbade my sister from buying one this year because I knew I could make one, and thanks to a recipe I found from @mccormickspice I threw together a ring and rosca donuts. How’s that for a first time? To say that the house smelled great is an understatement. This took over 3 hours to finish since the dough had to be proofed twice. 2017 was a rough year. I used to lift weights as a way of letting off steam but this year it seemed almost impossible. I baked my way out of anxiety and depression. My family lost our family pet of 20 years, Hookie was more than a pet. She was family. Then we lost our rock, our anchor, my dad. 2017 was filled with so much heartache and pain but we’re still here to tell the tale. May 2018 be easier on our souls because we’ve been through the shit and back. Everyone faces their own pain and struggles but keeps it to themselves for the sake of saving others from pain/ discomfort. Cheers to all of you harboring your own silent pains. May 2018 be filled with more love and positivity because we can all use more of it.
