I've been cooking, working, and following the news, but just wanted to remember to pop on here before June is over to say happy pride! 🏳️🌈 I'm so proud to be a gay man, I'm proud of my complex journey, and I'm proud to be a part of the LGBTQ+ community. We are a huge family of thinkers, artists, and fighters all over the world and it's so inspiring to see us ralley together for our brothers and sisters when they need it most. CHANGE IS COMING. Black Lives Matter and Black Trans Lives Matter, period. The fight for equality isn't over with just this election, and probably won't even be over in our lifetimes, but we have to continue to hold the powers that be responsible for their actions, Or boot them out! Hire, learn from, listen to, vote for, and support Black, Queer, female, POC, and other marginalized voices to finally make this country a more equitable place. ❤️✊🏿✊🏽✊🏼🌈
I made some super delicious and nutritious tomato gazpacho for @allrecipes . In a month or so my mom is gonna have some fresh, grown heirloom tomatoes in her garden so I can't wait to make it again soon! 🍅🌿🧅🌱😋. I'm someone that needs time to process problems. I over-analyze everything, I debate endlessly with loved ones until it's suddenly somehow 3 am, and all I ever want to do is search for solutions. But nothing ever is perfect and solutions don't come overnight. But TRYING is what matters. My family has had MANY tough conversations with each other and with loved ones this week. no one is perfect we all make mistakes, but you HAVE To speak your mind so we can all learn to do better. If you're like me, and have a ton of outrage and don't know where to put it, just DO SOMETHING. Protest if you feel safe. Donate to the MANY orgs that could use support, VOTE THIS NOVEMBER, or Try to convince your unknowingly rascist aunt or neighbor, to discuss the news together. For me. I try to educate myself as much as possible, correct falsehoods I find in myself and bad behavior of people I know. and I use my paragraph-writing-nerdy debate brain to call and email power players involved who's JOB IT IS to listen to us to change things. Just help out how you can. Everyone helps in different ways, evil only remains when we do nothing. George Floyd's murder is heartbreaking and infuriating and so are the other hundreds of black lives lost these past few years. This is why we say BLACK LIVES DO MATTER because if we don't, the world keeps proving they don't care. Our generation has to be the one to make these changes. And since the world has already been forced to pause by mother nature and society already collapsed, NOW is the time to rebuild. We’re all in this together. ✊🏽✊🏻✊🏿✊🏼✊🏾

Showed how to do the “velveting” process for tenderizing meats for stir-fries. Perfect for making Chinese takeout at home. Up on @allrecipes right now. Ingredients for 4 servings CHICKEN 1 lb boneless, skinless chicken thighs, cubed 1 egg white 1 Tablespoon rice vinegar 1 tablespoon cornstarch 1 teaspoon salt. GENERAL TSO’S SAUCE 1 tablespoon sesame oil 2 cloves fresh garlic, minced 1 teaspoon fresh ginger, grated ½ cup dried chili pod, chopped or 1 tsp red chile flakes. ¼ cup rice wine ¼ cup soy sauce ¼ cup rice wine vinegar ¼ cup sugar CORNSTARCH SLURRY ½ tablespoon cornstarch ½ tablespoon water GARNISH ¼ cup green onion, chopped 2 cups broccoli, steamed Sesame seeds or peanuts. white rice Preparation In a large bowl, egg white, rice vinegar, cornstarch, and salt. Whisk until combined. add the cubed chicken, coat it in the marinade. Cover with plastic wap and let marinate in the fridge for at least 1 hour. Overnight is best. Heat a skillet or pot with oil at least 2-3 inches deep. Once 375 degrees, fry the chicken in batches until cooked through. Set aside. To a wok or skillet, add the sesame oil, garlic, ginger, and chili pods. Saute until aromatic. Add the soy sauce, rice wine, rice wine vinegar, and sugar. Bring to a boil. Make the cornstarch slurry with cold water and add it to the boiling general tso sauce. Add in the fried chicken pieces, and coat completely in the sauce. Serve with a side of rice, garnished with green onion, sesame seeds, and broccoli. Enjoy!

made some simple cranberry orange muffins for my family and gave some muffin hacks with @allrecipes 😌 RECIPE Cranberry Orange Muffins Ingredients: 1/2 cup (115g ) unsalted butter, softened to room temperature 1 cup (100g ) granulated sugar 2 large eggs, at room temperature 1 tbsp pure vanilla extract zest of 2 oranges 2 cups (220g ) all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon ground cinnamon 1/2 teaspoon salt 2 Tablespoons (30ml ) orange juice 2 Tablespoons (30ml ) milk 1 and 1/2 cups (185g ) fresh or frozen cranberries, chopped (do not thaw ) 1 cup chopped pecans Preheat oven to 375 (190°C ). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. Add soft butter and sugar to a bowl. With an electric beat the butter and sugar. on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and bottom of the bowl as needed. Add the eggs one at a time. And then the vanilla extract, orange juice and milk. Beat on medium speed for 1 minute until smooth. Set aside. In a large bowl, toss together the flour, baking soda, baking powder, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and slowly fold together. Add about 2 tbsp of four into a bowl with the orange zest, nuts, chopped frozen cranberries. Toss together. And add to the muffin batter. Fold together. scoop batter into prepared muffin pan with muffin liners ⅔ of the way. Bake for 20-25 minutes or until a toothpick comes out clean. Enjoy!

One great thing about our little secluded neighborhood in the end of town is my family and I can go on walks outside and not even get close to other people during #quarantine . Doing morning walks every day had really been great for my soul. 😌🌿

My family is making simple meals these days and trying to conserve, but I still enjoy drooling over some great food and solo recipes of mine I’m still editing and uploading to my recipe library. I Made these delicious lobster rolls a while back and the solo recipe is up on Youtube now! Link in bio and recipe below! 🦞😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Lobster Rolls Recipe Herb Aioli 1 egg yolk Salt, to taste Pepper, to tastet 1 cup vegetable oil 1 tbsp lemon juice 1 tablespoon finely chopped fresh chives 1 tablespoon finely chopped fresh tarragon or chervil Lobster Roll 1 pound cooked, shelled lobster meat (about four 1 1/2-pound lobsters ), chopped into 1/2-inch pieces ½ cup small diced celery ½ cup small-diced red onion 2 tablespoons herb aioli ½ teaspoon finely chopped fresh chives ½ teaspoon finely chopped fresh tarragon or chervil (optional ) 1 teaspoon fresh lemon juice (or to taste ) Coarse or sea salt Freshly ground pepper 2 tablespoons unsalted butter, melted, for rolls Hot dog buns PREPARATION To a pot of boiling water, add a large handful of salt and the lobster tails. Cover and let cook for 8-10 minutes or until the lobsters are bright red and the meat is cooked through. Remove from the water and let cool completlely. To a small bowl add the egg yolk, minced garlic, lemon juice, chives, hot sauce, terragon, salt, and pepper, whisk together. Until smooth and more pale yellow. Start streaming in the oil drop by drop, then after about 3 tablespoons have been added stream in the rest smoothly. Set aside. To a small bowl add the cooked lobster, celery, red onion, chives, mayonnaise, chervil, lemon juice, salt, and pepper. Refrigerate, covered, while preparing rolls, or up to 2 hours. Heat a large heavy skillet or griddle over medium heat until hot. Lightly brush outside of buns with butter; transfer to skillet. Cook, turning once, until golden brown, about 1 1/2 minutes per side. Spoon about ½ cup lobster mixture into each bun. Garnish with more herbs. Serve immediately. Enjoy!
Thanks to everyone for the really kind birthday wishes! 🎂😇❤️🥳Even though it was a bit of an odd way to spend my 25th during this time of isolation, I loved spending time with my family, making some good food, and going for a little walk in the beautiful, empty, lakefront of Duluth. All the super sweet texts, posts, and calls made me feel so special yesterday, so thank you. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ My first 25 years have been focused on figuring out my talents, who I am, and who I am not. And I'm so thankful for all the lessons I have learned so far. For my next 25 years, I'm hoping to start thinking out of the box, trying new things, discovering more of the world, and figuring out new challenges to tackle! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ As the entire world has been changing, so has my life, I’m excited to try lots of new goals, ambitions, and aspects in my career and in my personal life. So exciting things ahead! I'm hoping for lots more growth, new challenges and experiences, but also, I’m proud to still be the same ol’ Matty. Love you all. ❤️
Made a simple scrambled egg video for a new client coming out soon. How do you make your scrambled eggs? I like mixing in a bit of milk to help make large fluffy curds and I cook em in butter with kosher salt and freshly cracked pepper. And for these, I mixed in some green onion and queso fresco I had in my fridge. 😋😋😋

I’m just at home listening to comedy podcasts, cooking, and editing to pass my corona days away. If you’re bored and hungry and want to dip some bread into some creamy goodness, here is my Healthy spinach and artichoke dip recipe. Made with geek yogurt and fresh artichokes! It’s incredible with crudité and grilled bread! Recipe below and video link is in my bio. 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Healthy Spinach Artichoke Dip Recipe: 2 Fresh artichokes ½ lemon Salt, to taste Pepper, to taste Onion 2 tablespoons, Garlic 5 ounces spinach. 2 cups Full fat greek yogurt 2 tablespoons parlsey 2 tablespoons chives ¼ cup lemon juice 2 tablespoons olive oil Sliced Watermelon radishes to diip. Grilled sourdough bread to dip. PREPARATION Peel the artichokes. Peel off any dark hard outer leaves. Cut off the top third. Cut the artichoke in half lengthwise, scoop out all the feathery flesh inside. Cut into quarters and set aside. If it takes a while, rub the artichokes with lemon or soak in acidulated water until ready so they do not turn brown. Add the trimmed artichoke hearts to boiling water with a lemon half and salt. Boil for 20 minutes or until tender. To a skillet on medium high heat, add olive oil and heat until it shimmers. Add onion, garlic, salt and pepper. Cook until the onions are soft and browned. Add the cooked artichoke pieces and spinach. Mix until the spinach wilts down. Let the mixture cool. To a bowl add the greek yogurt, cooled veggies, parsley, chives, lemon juice and adjust seasoning of salt, pepper, if needed. Garnish with olive oil, one of the artichoke quarters, and julienned watermelon radish Serve with grilled sourdough bread, extra veggies, and watermelon radish to dip. Enjoy!
Hey friends ❤️ I haven’t posted on here in a while cause after finishing DinnerViews I took a little break to finally rest a bit and enjoy some time off... And then the COVID-19 pandemic started happening and has gotten out of control. Life is crazy. 😅😢 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’m so lucky to be safe with my family at home in Minnesota. We’re taking precautions for all this madness: being extra hygienic, staying home as much as we can, but of course it’s still stressful. To my friends in LA, NY, and in Europe, I can’t imagine how much more terrified you must be, it’s pretty scary. If you need someone to chat with or to cheer you up I’m always just a text away ❤️. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Work Wise, I’ve decided to take a break from other clients/freelancing and just enjoy creating my own content. I will keep uploading my individual recipes from dinnerviews to youtube until they’re all posted and my recipe library is finished. But after that I’m not sure. I’m itching to return to a new company and start a new chapter, but with corona that will definitely have to wait a bit. I don’t really know what’s going to happen or how this will all unfold. None of us do. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ If anything, this craziness reminds me that jobs, deals, and money are never as important as connecting with the people you love and spending your day in ways you actually enjoy. I’ve been catching up on a ton on my favorite shows and podcasts, cooking a ton of great food with my family, doing some writing/reading, nerding out with politics, going to comedy shows, and working out with blogilates/sweating in my living room. No one wants to see that haha. 🤣 Life is uncertain for all of us now. Follow the CDC’s guidelines, and don’t do anything crazy out of fear. We just gotta tough it out. We’ll all get through this. Indulge in some delicious food over the next few weeks, call your family, and try to enjoy the good things. <3
